These events, held at CMA Formation Barbezieux, aimed to highlight the artisanal excellence, technical mastery, and creativity of professionals and apprentices in two iconic French pastry specialties.
For the Best Flan Competition, a jury of professionals evaluated the creations based on demanding criteria such as cooking, visual appearance, neatness of the cut, harmony of flavors, and the taste and texture of the cream and pastry. The first prize was awarded to Mathieu Ringeard from Parfums Sucrés in Ruelle-sur-Touvre, followed by Thomas Voisin from L’Instant Gourmand in Jarnac and Melany Merazga from Le Coin des Douceurs in Angoulême.
The Best Millefeuille competition, on the other hand, showcased the technical skills of apprentices. Candidates were judged on six criteria, including aesthetics, crispness of the puff pastry, cream texture, flavor harmony, and the product's marketability. Loulika Niambi from Boulangerie Pâtisserie Saint-Michel in Saint-Michel won first prize, ahead of Malia Bunoust from Maison Giel in Saint-Yrieix-sur-Charente and Johan Naud from Maison Giel in La Couronne.
The CMA Nouvelle-Aquitaine – Charente congratulated all the winners and participants, emphasizing that these competitions help promote the baking and pastry professions and highlight the talents that drive local craftsmanship. Thanks were extended to the Departmental Federation of Bakery and Pastry of Charente, jury members, and partners for their support.
Christophe Laugère, President of the Departmental Federation, was present to support the laureates. The support of partners such as Valrhona, Legeay, SID, Minoterie Planchot, and Minoterie Méchain was also acknowledged.
