After training at Ferrandi Bordeaux and gaining experience in prestigious establishments, Thibault Pradel, originally from Brive, chose to return to his native region to take over the family home. At 30 years old, he has opened Maison Pradel, a restaurant with an intimate setting located on a small street in the historic heart of the city.
The restaurant offers only twelve covers, with a maximum of four per table. The tabletops are made of solid ash wood, sourced from trees felled by a storm in the Lot region. The counter shares the same local origin, as do the wooden dishes, created by a craftsman from Corrèze. Family photos on the walls recall his ancestors' history in charcuterie and butchery since 1880, a heritage the chef honors by wearing a Parisian-style butcher's apron.
On the plate, Thibault Pradel showcases ultra-local products, with suppliers located within 25 km of Brive. The menu offers two distinct experiences using the same products: a bistro-style lunch and a blind gastronomic menu in the evening. This tasting menu is kept secret and revealed throughout the meal.
The dining room offers two atmospheres and two chefs. At lunchtime, Thibault Pradel works in the kitchen with his right-hand man Antoine Prado, while his partner Nolwenn handles the service. In the evening, the chef moves to the dining room to better convey the spirit of the place, because "to cook is also to share."
